Pitaya Smoothie Bowl

What is Pitaya?
Pitaya is Spanish for dragon fruit and goes by many names including pitaya and pitahaya. Native to Mexico and South America, its two most common types have bright pink/red skin with green scales that resemble a dragon (hence the name).
What is Pitaya taste like?
Pitaya (or dragon fruit) tastes slightly sweet. Think of a combination of kiwi and pear.
How to eat Pitaya:
- Select a ripe, evenly coloured fruit.
- Using a knife, slice the pitaya in half
- Use a spoon scoop the fruit out of the skin or peel off the skin and dice pulp into small pieces

Pitaya Smoothie Bowl
Equipment
- High-powered Blender
Ingredients
- 1/2 cup coconut milk
- 1 pitaya smoothie pack (or 1 cup of freshly diced pitaya)
- 1/2 cup frozen pineapple
- 1/2 cup frozen banana
- 1/2 cup mango chunks
Instructions
- Combine all ingredients into a blender
- Blend ingredients until creamy
- Pour into bowl and serve with coconut shreds or desired toppings
