Healthy Pumpkin Waffles

These homemade Healthy Pumpkin Waffles are packed with delicious pumpkin flavour and warm spices. It’s perfect for any time of year! Serve with a dollop of Greek yogurt, cinnamon and pumpkin seeds for a protein-rich, nourishing breakfast.

Healthy Pumpkin Waffles
These healthy pumpkin waffles are tasty, simple, and easily rank as a top fall favourite recipe.
Equipment
- Waffle maker
Ingredients
Dry Mixture
- 2 cup flour
- pinch salt
- 1 tsp cinnamon
- 2 tsp baking powder
Wet Mixture
- 1 cup pumpkin puree
- 1 tsp vanilla extract
- 1 cup soy milk or any plant-based milk
- 1 large egg
- 1 1/2 tsp olive oil extra virgin
Instructions
- Mix dry ingredients in a large bowl
- In a separate bowl, whisk wet ingredients until well combined
- Make a well in the dry ingredients, and pour in the wet mixture. Gently fold in the flour mixture until combined (do not over mix)
- Lightly oil the top and bottom of the waffle iron or coat with nonstick spray.
- Once heated, pour 1/2 cup of the batter into the waffle iron, close gently and cook until golden brown and crisp, about 4-5 minutes
- Serve with greek yogurt, maple syrup, cinnamon and pumpkin seeds
- Devour!
