Healthy Pumpkin Waffles

These healthy pumpkin waffles are tasty, simple, and easily rank as a top fall favourite recipe.

Equipment

  • Waffle maker

Ingredients
  

Dry Mixture

  • 2 cup flour
  • pinch salt
  • 1 tsp cinnamon
  • 2 tsp baking powder

Wet Mixture

  • 1 cup pumpkin puree
  • 1 tsp vanilla extract
  • 1 cup soy milk or any plant-based milk
  • 1 large egg
  • 1 1/2 tsp olive oil extra virgin

Instructions
 

  • Mix dry ingredients in a large bowl
  • In a separate bowl, whisk wet ingredients until well combined
  • Make a well in the dry ingredients, and pour in the wet mixture. Gently fold in the flour mixture until combined (do not over mix)
  • Lightly oil the top and bottom of the waffle iron or coat with nonstick spray.
  • Once heated, pour 1/2 cup of the batter into the waffle iron, close gently and cook until golden brown and crisp, about 4-5 minutes
  • Serve with greek yogurt, maple syrup, cinnamon and pumpkin seeds
  • Devour!
