Beet & Goat Cheese Salad

Pickled beets and creamy goat cheese salad with crunchy candied walnuts, fresh blueberries and veggies, all tossed in a light, seasoned olive oil dressing. My personal favourite!

Ingredients
  

  • 4 cups arugula
  • 1/4 cup red onion thinly sliced
  • 1/2 tomatoes sliced
  • 1/2 cup candied walnuts
  • 1/2 cup fresh blueberries
  • 1/4 cup broccoli chopped
  • 1/4 cup yellow sweet pepper or any colour
  • 1/4 cup pickled beets thinly sliced
  • 1 oz goat cheese or as desired

For the olive oil dressing:

  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions
 

  • Make dressing by whisking olive oil, salt and pepper. Set aside
  • In a large bowl, add arugula, veggies and blueberries
  • Toss with olive oil dressing and mix well
  • Evenly divide your salad into 2-4 bowls to serve. Top each bowl with goat cheese, beets and candied walnuts. Spinkle extra salt and pepper for a nice presentation and enjoy!
