Here’s what you need:

  • Fresh basil
  • Almonds
  • Olive oil
  • Grated parmesan cheese
  • Garlic
  • Goat cheese
  • Red onion
  • Mozzarella
  • Red peppers
  • Leftover chicken breasts
  • Seasoning: S&P, dried parsley and oregano

Chicken Pesto Pizza

Homemade pesto, mozzarella, sauteed veggies, chicken and drizzled olive oil, baked until the crust is perfectly tender-crisp.

Cook Time 6 minutes
Total Time 16 minutes
Servings 12 12-14 slices


  • Baking sheet
  • High-speed blender


Pesto Sauce

  • 1 pkg fresh basil or 10-12 basil leaves
  • 1/4 cup almonds
  • 1/2 cup olive oil
  • 2 tbsp grated parmesan cheese
  • 1 tbsp garlic minced

Pizza Topping Ingredients

  • 1/2 cup roasted red peppers and mushrooms chopped
  • 5 roma tomatoes sliced
  • 1/4 cup red onion thinly sliced
  • 1 left over grilled chicken breass sliced
  • mozzarella cheese grated
  • goat cheese
  • 1/4 tsp salt, black pepper, dried parsley, and oregano
  • 1 tsp olive oil
  • 2 store-bought, 12-inch, thick pizza crust


  • Place pesto sauce ingredients in a high-speed blender and blend until smooth (it may look a little grainy from the almonds)
  • Set sauce aside
  • Using a spatula, gently pour the sauce and spread evenly over the pizza, leaving a 1/2-inch border around the crust
  • Add grated mozzarella and generously cover your pizza
  • Add leftover peppers, mushrooms, chicken, tomatoes and red onion
  • Crumble goat cheese and spread over toppings
  • Add seasonings and drizzle olive oil over the toppings
  • Place pizza on top oven rack and broil on low for 6 minutes or until cheese is melted
  • Remove from oven and place on a cooling rack. Serve and enjoy
