Here’s what you need:
- Fresh basil
- Almonds
- Olive oil
- Grated parmesan cheese
- Garlic
- Goat cheese
- Red onion
- Mozzarella
- Red peppers
- Leftover chicken breasts
- Seasoning: S&P, dried parsley and oregano

Chicken Pesto Pizza
Homemade pesto, mozzarella, sauteed veggies, chicken and drizzled olive oil, baked until the crust is perfectly tender-crisp.
Equipment
- Baking sheet
- High-speed blender
Ingredients
Pesto Sauce
- 1 pkg fresh basil or 10-12 basil leaves
- 1/4 cup almonds
- 1/2 cup olive oil
- 2 tbsp grated parmesan cheese
- 1 tbsp garlic minced
Pizza Topping Ingredients
- 1/2 cup roasted red peppers and mushrooms chopped
- 5 roma tomatoes sliced
- 1/4 cup red onion thinly sliced
- 1 left over grilled chicken breass sliced
- mozzarella cheese grated
- goat cheese
- 1/4 tsp salt, black pepper, dried parsley, and oregano
- 1 tsp olive oil
- 2 store-bought, 12-inch, thick pizza crust
Instructions
- Place pesto sauce ingredients in a high-speed blender and blend until smooth (it may look a little grainy from the almonds)
- Set sauce aside
- Using a spatula, gently pour the sauce and spread evenly over the pizza, leaving a 1/2-inch border around the crust
- Add grated mozzarella and generously cover your pizza
- Add leftover peppers, mushrooms, chicken, tomatoes and red onion
- Crumble goat cheese and spread over toppings
- Add seasonings and drizzle olive oil over the toppings
- Place pizza on top oven rack and broil on low for 6 minutes or until cheese is melted
- Remove from oven and place on a cooling rack. Serve and enjoy
