Creamy Broccoli Soup

This simple Creamy Broccoli Soup is healthy, creamy and delicious.

When the weather gets chilly, I always have a pot of homemade soup on the stovetop – it’s a staple. The great thing about this recipe is none of the ingredients are wasted. You don’t need to throw out the broccoli stalk – simply dice everything and toss it in the pot to blend. No one will be able to tell the difference!

Using just a few ingredients, this dish comes together in one hour and serves well with fresh sourdough bread or salad.

Ingredients:

  • Broccoli (fresh or frozen)
  • Onion
  • Garlic
  • S + P
  • Margarine
  • Coconut milk
  • Water
  • Vegetable broth
  • White potatoes

Equipment

  • Large pot

Ingredients
  

  • 2 broccoli chopped including stalk
  • 1 cup onion diced
  • 4 garlic diced
  • 3 tbsp salt
  • 1/2 tsp black pepper
  • 1/2 cup margarine
  • 3 cup coconut milk I used Kosa Coconut Milk
  • 4 cups water
  • 3 cups vegetable broth
  • 2 white potatoes peeled and diced

Instructions
 

  • Over medium-high heat, melt butter in a large pot
  • Caramelize garlic and onion in margarine. Then add broccoli, potatoes, water, vegetable broth, salt and pepper and cover until rolling boil
  • Reduce heat to medium-low and let boil for 15-20 minutes, or until broccoli and potatoes are very tender. Stir occasionally
  • Turn off the fire. Using a hand blender, blend soup until smooth. *
  • Using a cooking fork, slowly stir the soup to ensure everything is blended through
  • Over low heat, add coconut milk and stirring occasionally. Let simmer for 5-7 minutes
  • Serve immediately

Notes

*If you don’t have a hand blender, you can pour batches of the soup into a high-speed blender. 
If the soup is too thin, you can whisk flour in a separate bowl with water and strain the liquid mixture. If the soup is too thick, add more vegetable broth or water. 
You could also try roasting the broccoli beforehand if you prefer a nutty soup flavour.
