Creamy Tomato Soup (Without Cream)

This soup recipe is gluten-free and dairy-free. All you need is a few ingredients to make this easy, cozy soup at any time.


You can easily customize the ingredients in this recipe if you prefer. Along with tomato for thickness and texture, you can add leek or potatoes. Add leafy vegetables like spinach and kale for a more wholesome meal. In addition to fresh basil, you can add or substitute basil for thyme, rosemary or parsley. If coconut milk is not your preference, you can use cashew cream or mix water with flour to give you the desired thickness. Another alternative is to add white beans to your tomato soup. These not only increase your fibre and protein intake but also creates a creamy consistency without using any cream whatsoever. This is easily a repeatable and customizable dish that the whole family will absolutely love!

  • Large pot
  • Hand blender

Ingredients
  

  • 2 cups Roma tomatoes diced
  • 1/2 onion diced
  • 6 garlic cloves crushed and minced
  • 3 cups vegetable broth
  • 2 tbsp sugar white or brown sugar
  • 1/2 cup coconut milk
  • 1 can (100oz) tomato paste
  • 1/4 cup butter
  • 1 tsp salt
  • 1 tsp parsley dried or fresh
  • 1/2 tsp basil dried or fresh
  • 1/4 tsp black pepper

Instructions
 

  • In a large pot over medium heat, sautee onion and garlic in butter until soft
  • Add diced tomatoes and stir occassionally
  • Reduce heat to medium-low and cover
  • Stir in tomato paste
  • Add vegetable broth, coconut milk, sugar and seasonings. Stir occasionally
  • Using a hand blender, remove soup from heat and blend until smooth.
  • Top soup with parmesan cheese and dried thyme leaves. Serve immediately. Pairs best with garlic bread, grill cheese or salad
