Easy Pineapple Fried Rice

  • Frying pan

Ingredients
  

  • 2 tbsp sesame oil
  • 3 cups cooked white rice (Or any type of rice)
  • 1 cup frozen vegetables (corn, carrots, peas, etc.)
  • 1/4 cup onion diced
  • 1 tbsp scallions chopped
  • 3 garlic cloves minced
  • 1 cup pineapple diced
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp paprika
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/2 tsp dried parsley
  • 2 tbsp teriyaki marinade sauce (or light soy sauce or coconut aminos)

Instructions
 

How to Make Pineapple Boats

  • Using a bread knife, cut pineapple down in half
  • Using a small knife, cut around the inside of the pineapple
  • Cut pineapple flesh into cubes
  • Scoop out the fresh pineapple using a spoon or ice cream scooper. Place 1 cup of fresh pineapple cubes in a small bowl and set aside.

Prepare the Fried Rice

  • In a large frying pan, heat oil over medium-high heat
  • Add garlic, onion and frozen vegetables and cook until soft
  • Add rice, seasonings, terikyaki marinade sauce and pineapple and stir occasionally
  • Once rice begins to brown and "dance" (making a popping sound), add an additional tablespoon of sesame oil to the pan and reduce heat to medium low. Stir regularly
  • Remove from heat. Fill each pineapple half with the fried rice. Sprinkle chopped scallions on top and serve

Notes

This recipe is vegetarian-friendly, however, you can customize it by adding diced ham, chicken, grilled shrimp or your favourite meat for added protein if you prefer.
