Grilled Nectarine Salad

This salad is the perfect combination of sweet nectarines, leafy greens, and juicy tomatoes. It works as a delicious side to steak, grilled chicken, or by itself as a simple weekday lunch.
What’s the difference between peach and nectarine?
The only difference is that nectarines aren’t fuzzy. Both are similar from a nutrition standpoint: great sources of vitamin C, which helps maintain your immune system.

Grilled Nectarine Salad
Equipment
- Cast iron skillet
Ingredients
- 3 firm nectarines pitted, halved
- 1 tbsp olive oil extra virgin
- 2 handfuls spinach, kale, chard
- 3 plum tomatoes
- 1/4 cup red onion finely sliced
- 1.5 tbsp Maple Balsamic Vinaigrette
Instructions
- Heat olive oil in cast iron pan over medium-high heat
- Cut the nectarines and grill them for several minutes until they have charred marks
- Remove from pan and turn off heat
- Add spinach, kale, chard, tomatoes, red onion and grilled nectarines in a medium bowl
- Pour the dressing over the salad and toss well until evenly coated
- Serve immediately and enjoy!
