Ham and Brie Grilled Panini

Melted, gooey brie cheese with smoked ham and homemade basil mayo – the perfect way to add extra flavour to any sandwich or wrap. Made with two simple ingredients, fresh basil and mayonnaise, this spread is the star of the show! This ham and brie grilled panini is the perfect afternoon light lunch, game-day appetizer and a guaranteed crowd-pleaser.

This recipe was also inspired by a cafe I used to go to all the time in my work building. I typically don’t eat ham, but their ham and brie panini was irresistible – it was the only sandwich I ever ordered on their menu. Something magical happens when you marry ham with brie, honestly! It’s so good that I had to recreate it for my family and now they’re on board too!

Easily customize the ingredients to your liking:
Use other herbs – If you don’t have fresh basil, you could use fresh thyme, cilantro or chives as a substitute.

Use any creamy cheese – Brie may be substituted with another creamy, soft-ripened cheese with a bloomy rind, such as Camembert cheese.

Make it vegan – Swap ham and brie with grilled veggies, your favourite vegan cheese and vegan mayonnaise.

What is brie?
Brie is a soft, creamy, buttery cheese that originated in France and is produced internationally. Brie is traditionally made from cow’s milk but can also be made from goat’s milk.

What does brie taste like and what can you eat it with?
The flavour of brie is rich, buttery, and earthy with age. It has a runny, creamy texture and a strong earthy aroma. If you’re ever in the mood for a sweet dessert or snack, brie is also a dessert cheese. Pairing brie with something acidic will bring out its velvety texture – try it with delicious fruit complements like apples, grapes, or pears, or sweet sides like fig jam or honey.

Ham and Brie Grilled Panini

The combination of succulent fresh ham, basil mayo and melted brie makes a quick and wholesome light lunch or game-day appetizer.

  • panini press


  • 6 ciabatta rolls halved lengthways
  • 175 g brie cheese (I used President's Choice Blue Menu Light Brie), thinly sliced
  • 1 pkg fresh basil leaves or 8-12 basil leaves
  • 1/2 cup mayo (I used Hellmann's Real Mayonnaise)
  • 12 slices smoked ham thinly sliced


  • In a high-speed blender, blend mayonnaise and basil leaves until smooth
  • Slice the ciabatta rolls in half lengthways and spread both sides with the basil mayo. Arrange 2 ham slices and brie cheese per sandwich, or more ham slices if desired
  • Grill each sandwich in the panini press for 2-4 minutes or until brie cheese is melted. Serve immedately
