Homemade Vegetarian Chilli

Cold days call for spicy homemade chilli and baguettes. This is easily one of my favourite winter meals. This vegetarian recipe is easy to make with basic pantry ingredients, vegetables and spices.
Chilli Toppings
Here’s a list of popular options:
- Grated cheddar cheese
- Lime wedges
- Sour cream/Greek yogurt
- Chopped cilantro
- Sliced avocado

Ways to Eat Chilli
The options are limitless, but here are some common ways to eat chilli:
- Serve with sliced baguette
- Eat as chilli cheese Sloppy Joes
- Serve with toasted tortillas chips
- Eat as chilli cheese fries
- Enjoy a bowl of chilli on its own!
Whether you want to add some bread at the side or you want a big cozy bowl on its own, it’s equally delicious. This wholesome dish serves more than enough for the whole family or makes great meal prep for busy weekdays ahead.

Homemade Vegetarian Chilli
Ingredients
- 1/2 onion diced
- 4 garlic cloves crushed and diced
- 1 can of Aylmer Accents diced stewed tomatoes in chilli seasonings undrained
- 1 can of red kidney beans drained and rinsed
- 1/2 can of black beans drained and rinsed
- 1/2 tsp Salt
- 1/2 tsp Ground cumin
- 1 tsp Smoked paprika
- 1 pkg Club House Chili Seasoning Mix
- 2-4 cups of vegetable broth or water depending on how thick/thin you like your chilli
- Green onion and cilantro for garnish
- 1/2 lime squeezed
Instructions
- In a large pot, add 2 tablespoons of olive oil over medium heat.
- Add onion and garlic and cook until the onion is translucent.
- Add seasonings, Club House Chili Seasoning Mix, and stir frequently until fragrant.
- Stir in red kidney beans, black beans, and canned tomatoes (undrained).
- Add vegetable broth/water and bring to a boil.
- Reduce heat and simmer for 10 minutes, stirring occasionally.
- Squeeze lime and stir occasionally. Remove from heat.
- Add diced cilantro and green onion for garnish and serve with sliced baguette.
