One-Skillet Mushroom Chicken

Tender chicken breasts, cremini (also known as “baby bella” or baby portabello) mushrooms, fresh herbs and spices, all made in one skillet. Super easy to make as a meal prep for the whole family.
Instead of loading it with heavy whipping cream, I use coconut milk and my favourite trick of whisking flour and water. It thickens to the most amazing, creamy sauce that you can pour over mashed potatoes, rice, pasta, or veggies!
I used cremini mushrooms in this recipe, but portabello mushrooms, white mushrooms, or whatever you’ve got will work great.

One-Skillet Mushroom Chicken
Ingredients
- 3 boneless chicken breasts lightly pounded (not too thin)
- 2 tbsp olive oil extra virgin
- 3 garlic cloves minced
- 1/4 cup onion sliced
- 1/2 tbsp salt
- 1 tsp black pepper
- 1 tsp paprika
- 1 tsp dried oregano
- 1 tsp dried basil
- 1 tsp dried parsley
- 8 oz mushrooms (I used cremini mushrooms) sliced
- 2 cups coconut milk I used Kosa Coconut Milk
Instructions
- Pound chicken breasts. Rub seasonings on each side.
- Add 2 tablespoons of olive oil to a skillet over medium-high heat. Once skillet is hot, add chicken and sear until each side is golden
- While chicken is cooking, slice mushrooms and set aside in a bowl
- Once chicken looks golden, add mushrooms, onion, and garlic to the skillet
- Once onion and garlic begin to soften, pour coconut milk and reduce heat to medium-low
- In a small bowl, add 1/4 cup of flour (I use all-purpose flour) and 1/4 cup of water and whisk until combined. Using a fine strainer, strain liquid into the skillet
- Stir occasionally. Season to taste if needed. Add fresh basil leaves over top and serve immediately.
