Sweet Potato Shepherd’s Pie

This recipe swaps regular potato with sweet potato for a sweeter flavour. Both types of potatoes are rich in fibre, carbs, and vitamins B6 and C. You’ll want to add this incredibly filling and flavourful recipe to your next holiday menu!

Ingredients
  

Pie Filling

  • 1 cup frozen mixed vegetables peas, carrot, corn
  • 1/2 onion diced
  • 1 green pepper chopped
  • 3 garlic cloves crushed and minced
  • 1 lb lean ground beef
  • 4 tomatoes diced
  • 1 tbsp olive oil extra virgin
  • 1/4 tsp black pepper
  • 1 tsp seasoning salt
  • 1 tsp paprika
  • 1/4 tsp browning
  • 1 tsp dried parsley
  • 1 tsp dried thyme
  • 1 tsp dried rosemary

Sweet Potato Topping

  • 2 large sweet potatoes halved
  • 1 tbsp coconut oil
  • 1/2 tsp chilli powder
  • 1/2 tsp cinnamon
  • 1/4 tsp Hamilyan salt or regular sea salt

Instructions
 

  • Preheat oven to 375 F
  • Wrap sweet potatoes tightly in aluminum foil and bake for 2 hours or until fork tender
  • Once sweet potatoes are almost fork tender, begin preparing the meat filling
  • In a large skillet over medium heat, add onions and garlic and cook until soft
  • Add ground meat and brown. Stir occasionally
  • Add mixed vegetables, green pepper and tomatoes
  • Add seasonings to desired taste. Cover pot and reduce heat to medium-low
  • Begin making the topping while the meat filling cooks
  • Once sweet potatoes are cooked, carefully peel and chop baked sweet potatoes and add to a high-powered blender
  • Add remaining ingredients for sweet potato topping to a high-powdered blender and blend until smooth
  • Transfer the meat filling to a 9 x 9 inch casserole dish and top the meat filling with the sweet potato mash. Sprinkle extra cinnamon, chilli powder and salt on top.
  • Bake for 10 minutes. Remove from oven and serve.

Notes

You can also boil sweet potatoes instead of roast to save time. Roasting the potatoes brings out more flavour and sweetness, but if you’re short on time, dice and boil the sweet potatoes for 20 minutes or until soft.
