Almond Meal Oatmeal & Raisin Cookies

A healthy twist to a classic combo. If you haven’t tried my homemade Almond Milk recipe, check it out! In just a few steps, you’ll learn how to make the most delicious, creamy, sweet almond milk from scratch. Using the leftover almond pulp, bake it to dry out the moisture, grind it using a coffee grinder and you have your almond meal prepped for homemade cookies. 

What is the difference between almond meal and almond flour?  
Almond meal is made from raw, unpeeled almonds and almond flour is made from blanched (peeled) almonds.  

How to Make Almond Meal from Almond Pulp 

  1. Use the leftover almond pulp from your almond milk 
  2. Bake the pulp at 200 degrees F for 2 hours. Stir every 30 minutes 
  3. Let the dried pulp cool. Transfer to a high-powdered blender or coffee grinder and blend for 10-15 seconds 
  4. Transfer to a jar or container and store up to one month unrefrigerated

Equipment

Ingredients
  

  • 1/2 cup coconut oil not melted
  • 2/3 cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup almond meal
  • 3/4 cup whole wheat pastry flour
  • 1.5 cup rolled oats
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 3/4 cup raisins

Instructions
 

  • In a large mixing bowl, cream together coconut oil and brown sugar. Add the egg and vanilla extract and blend until well combined
  • In a separate bowl, mix together almond meal, whole wheat pastry flour, rolled oats, baking soda, cinnamon, sea salt, and raisins
  • Using a spatula, stir the dry ingredients into the wet ingredients
  • Cover the bowl and chill the cookie dough in the fridge for at least 15 minutes
  • Roll cookies into tiny balls, lightly press down and place 2 inches apart
  • Preheat your oven to 350*F and bake for 10-12 minutes
  • Cool completely on a wire cooling rack and store in an air-tight container
